Cádiz-the sweet is a Tritordeum-based malt, an alternative to barley or wheat malts in baking.

Tritordeum is a cereal combining durum (Triticum durum) and wild barley (Hordeum chilense) originated from Latin America. It is not a Genetically Modified Organism. (GMO)

Its malt flour has a natural brownish color, and sweet/nutty flavor.

Its nutritional profile is unique, when compared to wheat:

  • Its protein content is higher – around 14%
  • Its milling extraction rate is around 75%
  • Its enzymatic activity is higher – 350-550 Wk

Tritordeum contains gluten. It is not suitable for celiacs.

Keep below 20ºC and close bag after use. Shelf life up to 12 months.
