Tritordeum flour is an alternative to wheat flour in Baking, Pastry and Pasta making.

Tritordeum is a cereal combining durum (Triticum durum) and wild barley (Hordeum chilense) originated from Latin America. It is not a Genetically Modified Organism. (GMO)

Its flour has a natural ocre color, and sweet/nutty flavor.

Its nutritional profile is unique, when compared to wheat:

  • Its protein content is higher – around 14%
  • Its fiber content is higher – around 12%
  • Its lutein (antioxidant) content is higher – 10 times more than wheat
  • Its gluten composition shows lower level of immunogenic omega-gliadins (responsible for gluten sensitivity) – 40% less in flour / 50% less in bread

Tritordeum contains gluten. It is not suitable for celiacs.

Keep below 20ºC and close bag after use. Shelf life up to 6 months.
